  • 1 red onion
  • Splash olive oil
  • 250g chicken breast
  • 1 ripe avocado
  • 1 small ripe mango
  • Fresh coriander and lime (optional)

Preparation

  1. Add a drizzle of oil to a sauté pan over a medium/high heat, add the chicken breast and allow to cook for 3-4 minutes each side, until golden brown.
  2. Add the remaining onion slices to the pan and allow to fry with the chicken juices for 1 minute before adding the seasoning mix and a little water. Continue cooking over a medium/low heat for 2 minutes.
  3. Turn off the heat and allow the chicken to rest while you gather the remaining ingredients.
  4. Carefully slice the chicken and mix with the sauce before loading into your taco and topping with the salsa. Packed with fresh flavours, this is a taco that will give your tastebuds a wakeup call!

Expert Tips

  • Halve, deseed and scoop the avocado, then cut into small cubes.
  • Prepare the mango by cutting the flesh away from each side of the stone that runs through the middle.
  • Carefully peel off the skin and cut the juice mango into small cubes.
  • Take 2 slices of the red onion, finely chop and add to the avocado and mango.
  • Add the coriander and fresh lime juice, if using and mix all the ingredients in a bowl with the pineapple salsa provided. Place in the fridge until ready to serve.
