- 1 red onion
- Splash olive oil
- 250g chicken breast
- 1 ripe avocado
- 1 small ripe mango
- Fresh coriander and lime (optional)
Preparation
- Add a drizzle of oil to a sauté pan over a medium/high heat, add the chicken breast and allow to cook for 3-4 minutes each side, until golden brown.
- Add the remaining onion slices to the pan and allow to fry with the chicken juices for 1 minute before adding the seasoning mix and a little water. Continue cooking over a medium/low heat for 2 minutes.
- Turn off the heat and allow the chicken to rest while you gather the remaining ingredients.
- Carefully slice the chicken and mix with the sauce before loading into your taco and topping with the salsa. Packed with fresh flavours, this is a taco that will give your tastebuds a wakeup call!
Expert Tips
- Halve, deseed and scoop the avocado, then cut into small cubes.
- Prepare the mango by cutting the flesh away from each side of the stone that runs through the middle.
- Carefully peel off the skin and cut the juice mango into small cubes.
- Take 2 slices of the red onion, finely chop and add to the avocado and mango.
- Add the coriander and fresh lime juice, if using and mix all the ingredients in a bowl with the pineapple salsa provided. Place in the fridge until ready to serve.
