What is an enchilada?

An enchilada is a soft corn tortilla wrapped around a filling, like chicken, beef or veggies, topped with sauce and cheese, then baked in the oven. This gives the cheese an irresistible, gooey texture and crispens the edges of the tortillas to perfection. Made for sharing, enchiladas are great for feeding the whole family from just one dish.
